Banana & Chocolate Chip Marble Loaf

What’s not to love about the chocolate and banana combination? This is a healthier banana bread that’s moist, dense, not overly sweet and makes a great snack to slice off and go. It’s lower in sugar, uses gluten free flours and doesn’t contain any dairy either so caters to most intolerances.

Tip: if your bananas aren’t ripe enough yet, blast them in the microwave for a minute or so and they’re much easier to mash! If you want this sweeter, I’d recommend adding either a granulated sugar or sweetener, or an intense sweetener such as liquid flavouring drops.

  • 2 medium ripe bananas (180g), mashed
  • 2 large eggs
  • 45g honey
  • 100g oat flour
  • 40g soya flour
  • 50g chocolate chunks
  • 10g cocoa powder
  • 2 tsp milk
  • 1/2 tsp baking powder
  • 50g chocolate chunks

  1. Preheat the oven 180C. Line and grease a 1lb loaf tin.
  2. In a medium bowl, combine the dry ingredients, except for the cocoa powder and chocolate chips. In another bowl, beat together the mashed bananas, honey and eggs. Add this mixture to the dry ingredients and stir until fully incorporated and smooth.
  3. Remove half of the mixture into the bowl that had the wet mixture in, add the cocoa powder and milk and mix until incorporated. Stir the chocolate chunks into the plain banana mix.
  4. Alternate large spoonfuls of the banana and chocolate mixes into the loaf tin until no mixture remains. Smooth the top over and bake for 30-35 minutes or until a skewer comes out clean.
