Vegan Protein Brownie Bites

Cheeky little brownie bites with chunks of melty chocolate. I prefer these fresh out of the oven but they’re also great for a few days after (unfrosted) kept in an air tight container (or a tupperware box to every other Tom, Dick and Harry).

To make things a little fancier, you can add an easy 2 ingredient frosting, a few pretty sprinkles plus a little drizzling of melted chocolate spread (or nutella) and hey presto, you’ve got yourself a delicious little bite size chocolatey bit of goodness. Goodness taste wise, and health wise. Yum.

Ingredients:

  • 40g chocolate vegan protein
  • 30g cocoa powder
  • 30g wholemeal flour
  • 1 tbsp granulated sweetener
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • pinch of salt
  • 80g canned pumpkin puree
  • 80g soya yoghurt
  • 50ml milk
  • 1 tsp cider vinegar
  • 25 stevia drops, to taste
  • 1 large square (10g) dark chocolate

Directions:

  1. Preheat the oven to 180C.
  2. In a bowl, combine the vegan protein, cocoa, wholemeal flour, sweetener, bicarb, baking powder and salt. Make a well in the centre and add in the pumpkin, yoghurt, milk, vinegar and stevia drops. Stir it together and gradually bring in the dry ingredients to mix it all together. Once fully combined and smooth, stir in the chopped chocolate (if using) and divide between holes of a mini silicone mould, or mini cupcake cases and bake for 12 minutes.
  3. Remove from the oven and cover with a tea towel until cool.
